of course my #1 meal to order is the sweet pork barbacoa salad. what is it? i will tell you...be prepared to drool.
the sweet pork barbacoa salad is this: a large flour tortilla covered in perfectly cooked mexican rice, black beans, & savory mouth watering sweet pulled pork. that is then topped with crispy lettuce, guacamole, salsa, chips (if you like cilantro, i don't; then you can have that as well) and the best dang spicy ranch dressing you will ever eat! THAT my friends is a sweet pork barbacoa salad! people have attempted to recreate this delicious meal but it cannot be done. don't argue.
this stuff is so good it deserved it's own blog post. :D
yup. i totally botched my diet this week for a sweet barbacoa burrito. SOOOO good.

DeleteI have to disagree a little bit here...I'm a Costa Vida lover. Nothing beats their sweet pork. Cafe Rio is good, but Costa Vida....there just aren't words ;) Haha! They're super similar though.

DeleteUm, Kylie....Cafe Rio here, the reason why the recipes are similar, is because...Costa Vida stole our recipe. True story. Just saying. I think you should stay with who invented it.
